That's too Techie for me . Apparently I excel at mindless tasking. A bottle of Gibson's with no bottom and I can st in the shed for hours solving all the worlds problems ...or ... just drift into mindless dribble !
My first crack at Summer Sausage - Bear style .
The Set up
The Smoke ... The story ... So I started the smoking process at around 2 in the afternoon. All tolled I think the total smoking/cooking time was supposed to be about 4 hours. Outside air temp in the 50 - 60*f area, I was in the shed so wind, if any, was not a factor. Now we were very lucky that the actual logs fit in the smoker ... they were way too long. How much this affected the cooking time I am uncertain. What I do know is that the Bradley had a hard making and maintaining the set cooking temps. I did not want to increase the temp to get t done so me and Mr. Gibson nurse the logs along until I got to the magic 160*f temp. By the time we were all said and done, the logs were smoked, I was toast and Mr. Gibson was only a shell of his former self.

From this I learned several things : ... 1 ... The Smoker heating element is undersized at 500 w.: ...2... Make the logs shorter and ...3 ... I'm in love with Mr. Gibson.
From all accounts my first smoking experience met with great reviews, so the time and effort paid off in the long run.
