FIELD DRESSING
As with any harvest, field dressing of your animal plays a critical roll in its palatability for table fair. A bears heavy fall coat and thick layer of autumn preserves (fat), have a tendency to hold the heat in and quickly spoil the meat. That is why a same day recovery can be so important. If the recovery is the next day and it’s been a warm night, there is a good chance you will lose the meat. Not only does the body cavity have to be cleaned out to air but the hide should come off as soon as possible to hasten the cooling process.
The quicker you can get the meat hanging in a cooler, the more you will be glad you did when you sink your teeth into a delicious roast, or some freshly barbequed steaks or chops.
