Found this recipe in a small recipe book and loved it ! Now for me this is a Medium Hot recipe ... great flavour ... and not a lip burner. There is Belly Hot and Lip Hot and as much as I love the Belly Hot ... there are repercussions !
Chip’s Sissiboo Rib Sauce
2 Racks Bear Ribs
1 Small onion , chopped 1 Clove garlic , minced 1Tbsp Cooking oil
1 ½ cups Ketchup 1/3 cup Vinegar 1/3 cup Molasses 1 Tbsp Bottled hot pepper sauce 2 Tsp Cayenne pepper 1 Tsp Chili Powder 1/3 Tsp Salt 1/2 Tsp Dry Mustard
1… In a medium saucepan cook onion & garlic in hot cooking oil , till the onion is tender but not brown.
2…Stir in the next 8 ingredients
3… Bring mixture to boil, reduce heat & simmer ( uncovered ) for 15 minutes , stirring occasionally.
Notes: I will usually make a double batch and baste the ribs to marinade over night if Possible . Try and get a good hot sauce I cook the ribs for 2 hours at 250* ( covered ) basting occasionally , then turn the temp down to 200* for another 1 hour, basting as needed .
I then throw them on the Q to give them that BBQ look , basting again if needed .

Sitting here salivating & I just ate! My wife just commented on how good those ribs looked. Told me "WE (!) better get a bear soon".
